Tonight sweet but health dessert- Mango Passionfruit & Coconut, Chia Seed Parfait! This was so quick & easy to make and was perfect to end a sunny weekend. My three favourite fruits all in one dish… Perfect!
2 Fresh Mangos
1 Large Passionfruit
400ml Canned Coconut Milk
4tbsp Chia Seeds
4tbsp Shredded Coconut
1teasp Vanilla extract
5-6tbsp Maple Syrup depending on sweetness preference ( I used honey instead to keep it healthy!)
Add all ingredients (except from mango and passionfruit) and mix until combined.
Let the mixture sit at room temperature for 30mins.
Cover mixture and place in fridge for a further 3-4hours.
Serve in glass with layers of diced mango and passion fruit and the mixture.
Top with shredded coconut and dig in!
